80 Winery was founded in 2017 by brothers Christos and Panagiotis Bakalis, who started their endeavor from scratch, with only a barrel and their passion for wine. Their love for viticulture and winemaking began with traditional family practices and evolved through extensive studies in the field of wine.

The winery focuses on producing high-quality wines with Protected Geographical Indication Macedonia (PGI Macedonia), methodically utilizing appropriate winemaking techniques. The goal of the winery is to highlight local grape varieties and showcase the unique characteristics of the region’s soils.

With dedication and passion, the Bakalis brothers create wines that reflect the quality and richness of the Greek land, harmoniously combining tradition with modern winemaking techniques.

Wines

CAVA DROPALIA  – Dry Red (Aged)

Category:
P.G.I. Macedonia | Vintage: 2020

Varietal Composition:

Cabernet Sauvignon 70% – Syrah 30%

Vinification:

Classic red vinification using selected yeast strains and approximately 17 days of maceration. The wine matures for 16 months in oak barrels and continues aging in the bottle for an additional two years, achieving CAVA status.

Analytical Data:

Alcohol: 14.5% | pH: 3.49

Total Acidity: 6.2 g/l (tartaric acid) | Residual Sugar: 2.4 g/l

Tasting Notes:

Deep garnet color. The bouquet reveals complex aromas of red and black fruits such as blackcurrant and ripe plum, accented by notes of violet, green pepper, and subtle vanilla from oak maturation. On the palate, it is rich and balanced, with velvety tannins, fine structure, and a long, aromatic finish.

Serving Suggestions:

Serve at 16–18 ℃.

Pairs beautifully with red meat dishes, rich stews, mushroom risotto, game, and aged yellow cheeses.

Dropalia Trilogy

Dropalia – Dry White

Category:
P.G.I. Macedonia | Vintage: 2023

Varietal Composition:
Malagousia 70% – Assyrtiko 30%

Vinification:
Cold pre-fermentation maceration followed by alcoholic fermentation at low temperature, aiming to capture the fine aromas of each variety separately. After blending, the wine remained on its fine lees (sur lie) for 20 days, with regular stirring (bâtonnage). This technique enhances aromatic complexity and adds a rich, velvety texture to the palate.

Alcohol: 13.5% | pH: 3.46
Total Acidity: 4.8 g/l (tartaric acid) | Residual Sugar: 1.6 g/l

Tasting Notes:
Pale lemon color. The nose reveals floral, herbal, and tropical aromas — jasmine, sage, chamomile, and mango — layered with hints of citrus and unripe peach. On the palate, it is full and balanced, with refreshing acidity and flavors of lemon and grapefruit leading to a long, fresh finish.

Serving Suggestions:
Serve at 8–10 ℃.
Pairs beautifully with citrus-based salads, pasta with white sauces or basil pesto, white meats, and seafood. It also matches wonderfully with savory vegetable pies and Asian-inspired dishes.

Dropalia – Dry Rose

Varietal Composition:

Xinomavro 100%

Vinification:

Fermentation in stainless-steel tanks under controlled temperature, with a short maceration to ensure soft tannins and highlight the fresh, fruity character of the variety. The wine remained on fine lees for a few weeks, without any oak use. Early bottling to preserve its vibrancy and refreshing character.

Analytical Data:

Alcohol: 12.5% | pH: 3.59

Total Acidity: 6.0 g/l (tartaric acid) | Residual Sugar: 3.4 g/l

Tasting Notes:

Bright purple color. Aromas of ripe strawberry, cherry, and pomegranate with subtle floral and sweet spice notes. On the palate, it is light-bodied with lively acidity and soft tannins. Fresh, fruity, and balanced, leaving a pleasant finish that invites another sip.

Serving Suggestions:

Serve chilled at 8–10 ℃.

A perfect wine for summer gatherings and casual dining. Pairs beautifully with tapas, chicken burgers, grilled shrimp, savory pies, or vegetable dishes served at room temperature.
